ranger cookies

Cookie cravings hit hard this week. And BHG Ranger cookies seemed to be the perfect fix. Ranger cookies contain everything good in this world as far as I am concerned. Coconut, almonds, rolled oats, and dark chocolate were my ingredients of choice.

Ingredients
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1 cup  rolled oats
1 cup flaked coconut
1 cup chocolate chips (I used dark chocolate chips)
Method
Preheat oven to 375 degrees.
In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping side of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour, the oats, coconut, and dried fruit.
Drop dough by rounded teaspoons 2 inches apart onto a cookie sheet. Bake for 10 to 12 minutes or until edges are golden and centers are set. Transfer cookies to a wire rack; let cool. Enjoy!
